Montrio, Tarpy’s and Rio Grill celebrate the height of spring with menus that include sustainable California spot prawns

Coastal Roots Hospitality celebrates the peak of spring season with a focus on sustainability and fresh, local ingredients. The restaurant group’s three restaurants — Montrio, Tarpy’s and Rio Grill — are highlighting California spot prawns, a sweet, sustainable seafood delicacy harvested from the pristine coastal waters.

Known for a tender texture and naturally sweet flavor, spot prawns are sustainably caught using responsible methods, ensuring minimal environmental impact.

“These prawns offer an incredible balance of flavor and sustainability, and we’re proud to highlight them at each of our restaurants this season,” said Ken Donkersloot, CEO of Coastal Roots Hospitality.

Following are each restaurant’s most recent springtime additions:

Montrio

Located in the heart of Old Monterey, Montrio is celebrated for its innovative and sustainable approach to fine dining. Among the new items Montrio is offering include:

Steak Tartare: Egg jam, fried capers, grilled bread
Heirloom Tomato Salad: Burrata, basil pistachio pesto, Villa Mandori balsamic vinegar, puffed quinoa
California Spot Prawns: Uni cream, fresh herbs, garlic, butter, white wine, squid ink linguine
Tarpy’s

A local favorite in Monterey, Tarpy’s is known for its evolving seasonal menu that showcases fresh, local ingredients. Among the new items Tarpy’s is offering include::

Fried Artichoke Hearts: “Srirachanaise” and ranch.
Caprese: Heirloom tomato, blood orange, mozzarella, basil, balsamic, sea salt, crispy quinoa
Head-on Spot Prawns: Garlic butter sautéed, truffle mashed potato, grilled asparagus, lemon-chive mornay
Rio Grill

In Carmel, Rio Grill is committed to serving fresh, locally sourced seafood, and its take on California spot prawns is no exception. Among the new items Rio Grill is offering include::

Fire Roasted Garlic Plate: Whole roasted garlic, goat cheese, heirloom tomato jam, and artisan bread
Heirloom Tomato Burrata Salad: Heirloom tomatoes, burrata, strawberries, baby arugula, red onions, roasted pine nuts, citrus basil vinaigrette and balsamic glaze
Pacific Coast Spot Prawn: Pan-seared vegetable medley, sesame soy noodles, wasabi aioli, ginger, over crispy wontons
