CARMEL, Calif., — Pacific’s Edge at Hyatt Carmel Highlands will host a tableside Thanksgiving dinner from its spectacular perch above the sea along Carmel Highlands.

The three-course dinner (plus an amuse) takes place on Thursday, Nov. 23 from noon-8 p.m., with multiple options at each course. Cost for this unique experience is $85, plus tax and gratuity.

Guests begin the feast with freshly baked assorted rolls and compound butter, followed by an amuse (Sweet Potato Cornetto with brûléed meringue, and brown butter sage crumble).

The first course brings a choice of the following: Butternut Squash Bisque with candied pecans, and maple crème; Spiced Farro & Salinas Valley Greens (vegan), with Watsonville apples, chile pepitas, and maple vinaigrette; or Highlands Oyster Rockefeller, with creamed spinach, guanciale, and glaçage.

The entrée features: Herb Roasted Turkey and Apricot Glazed Spiral-Cut Ham (whipped potatoes, sourdough water chestnut dressing, roasted brussels sprouts, and grand marnier cranberry sauce); Herb Roasted Salmon (aged Cheddar polenta, braised rapini, beurre rouge; or Harvest Squash Fonduta (winter squash, Roasted wild mushrooms, crispy root vegetables.

For dessert, diners may choose between a vegan apple tartlet or a personal pumpkin pie.
